
I was digging through my box of recipes from my childhood and found a well worn recipe card. I thought I would share this easy recipe with you:
PEANUT BUTTER COOKIES
1 Cup Peanut Butter (chunky or smooth, whichever you prefer)
1 Cup Shortening
1 Cup Brown Sugar
1 Cup White Sugar
2 Eggs (Beaten)
1 Teaspoon Vanilla
2 1/2 Cup Cake Flour
1/4 Teaspoon salt
1 Teaspoon Baking Soda
Cream peanut butter and shortening together in large mixing bowl.
Add sugar, beaten eggs, vanilla and dry ingrediants. Chill dough.
Mold into balls (about a teaspoon) place on cookie sheet and press with fork
to less than 1/4" thickness. Bake 10-12 minutes at 375 degrees.
