Lemon Rounds~Yummy!
The lemons are ripe and just in time to make these wonderful Refrigerator cookies for the holiday. Yummy!!!
Lemon Rounds
1 1/2 Cups sifted regular flour
1 Egg
1/2 teaspoon baking soda
1 Tablespoon Lemon Juice
1/2 teaspoon salt
2 teaspoons lemon zest (grated rind)
1/2 cup shortening
1/2 cup finely chopped pecans
1 Cup Sugar
Preheat oven to 375 degrees
1. Measure flour, soda, salt into sifter
2. In medium mixing bowl cream shortening with sugar until fluffy, beat in egg, lemon juice, zest and pecans. Sift in flour mixture, blending well to make a soft dough.
3. Shape into 2 long rolls and wrap in wax paper, chill overnight. When ready to bake,
slice dough 1/4" thick. Place on cookie sheet.
4. Bake at 375 degrees for 8 minutes or until golden around the edges. Cool on wire racks.
The dough will keep in the refrigerator for a week or two, you can bake these in small batches as needed.
